Finca Milán is a family-run farm located in the lush hills of Pereira, Colombia. Julio César Madrid and his team have become pioneers in post-harvest innovation, exploring controlled fermentations and Co fermentations.
This “NG” (Nitro-Gas) process introduces nitrogen during co fermentation, creating an oxygen-free environment that enhances clarity while boosting fruit expression.
The result is a coffee bursting with vivid melon – watermelon and tropical freshness, yet remaining elegant and structured a perfect example of how science can push it without compromising precision and balance.
