Níspero Lot, Pitalito, Colombia
This Typica comes from the Níspero lot at Nogales Farm, at an altitude of 1,900 metres. The Typica trees grow alongside Yellow Bourbon and some of the farm’s Geisha production. At this elevation, the cooler climate encourages consistent cherry maturation and contributes to the quality of the harvest.
Fermentation & Processing:
Washed and decaffeinated with coffee mosto
The cherries are hand-picked at peak ripeness and sorted to keep only the dense, healthy fruit. After depulping, the pulp and mucilage are pressed to extract a juice rich in sugars and fruity compounds. This juice is fermented and stored as coffee mosto.
The coffee is first dried on raised beds, then hulled at the farm. It undergoes an on-farm decaffeination process that combines controlled fermentation with a specially prepared coffee mosto to naturally reduce its caffeine content while preserving its character.
After decaffeination, the beans are reinfused in fermented coffee mosto for approximately 24 hours. This allows them to absorb aromatic compounds developed during fermentation, helping preserve their sweetness and complexity.
Finally, the coffee is dried in a dedicated facility on enclosed African raised beds, with careful control of airflow, temperature and humidity. Drying takes approximately five days. The coffee is then packed in GrainPro bags and stored in a climate-controlled environment.
