Doyo, Mana, Jimma, Ethiopia

This coffee comes from Doyo, in the Mana district of Jimma, one of the main coffee-growing areas of western Ethiopia. The region is home to many smallholder farmers who grow coffee at altitudes of 1,900 to 2,000 metres, often alongside food crops in a diverse agricultural landscape.

It is produced by Doyo smallholders within the Jimma Farmers’ Multi-Purpose Agricultural Cooperatives Union. Founded in 2004 with 14 primary cooperatives, the union now includes more than 212 primary cooperatives and represents over 143,000 producers. Of these, 28 cooperatives are involved in coffee production and processing across more than 13,000 hectares.

At these high altitudes, farmers grow local varieties suited to the terroir, including 74110 and 74112. The combination of altitude, local varieties and careful work contributes to the clean, expressive and balanced character of coffees from this part of Ethiopia.

The cooperative also reflects the progress made in western Ethiopia over recent decades. Improvements to infrastructure, processing equipment and farmer training have helped unlock more of the region’s quality potential.

Fermentation & Processing

Washed

For this lot, ripe cherries are carefully received, sorted and prepared before being pulped and fermented. The washed process removes the fruit and pulp from the beans before the coffee is washed and prepared for drying.

The coffee is then dried on raised African beds, allowing for slow, even dehydration. This careful drying helps preserve its natural sweetness, clarity and aromatic complexity.

This traditional washed process, combined with the high altitudes of Mana and the 74110 and 74112 varieties, brings out the clean, expressive character of western Ethiopian coffees.
